Turn on the oven to heat up to 180 degrees.
Clean the peppers from the seeds.
Beat 2 eggs in a bowl. Add to them the crushed white cheese, the grated yellow cheese, the diced tomato and the chopped fresh parsley.
Stir the mixture and fill the peppers with it, then arrange them in a greased pan.
Drizzle with oil and bake for about 30 minutes or until done.
5 minutes before turning off the oven, crack an egg into each pepper.
Serve the aromatic stuffed peppers with eggs and cheese, garnishing them with fresh parsley.
